Sponge Toffee is a sugary confection with a light, rigid, foam-like texture. It is made with boiled sugar and corn syrup. As it’s taken off the heat some baking soda and vinegar is added to foam it up as it cools. The baking soda and acid react to form carbon dioxide which is trapped in the highly viscous mixture. The resulting block of frothed sugar is mostly air, but it's always a snack favourite.
